- 1 teaspoon ginger-garlic paste
- 1 bay leaf
- 1 inch long cinnamon
- 4-5 black pepper corns
- 1 teaspoon chilli powder
- 1/2 teaspoon mix spice /garam masala
- as per taste salt
- 1 teaspoon oregano or thyme
- 1 handful chopped coriander leaves
Instructions to make to make Whole-wheat Chicken Fatayer
- Mix a cup warm water with 1 teaspoon of yeast and 2 teaspoon sugar. Keep aside to broom.
- In a big mixing bowl add flour, salt, beaten yoghurt and soft butter.
- Mix nicely to combine.
- In the meantime the yeast has activated well.
- Make a well in the centre of the flour mixture and add the yeast mixture.
- With the help of a spatula slowly incorporate the flour with the yeast mixture.
- Mix well till well combine.
- Now with the help of your hand knead the mixture by adding 2-3 tablespoon of water.

- Saute again for 2-3 minutes.
- Add ginger-garlic paste and saute for a minute. Add tomato paste.
- Mix well and cook for one more minute.
- Add the minced chicken and mix well.
- Add turmeric powder, chilli powder, salt, oregano and mix spices.
- Mix well to combine.
- Fry for 2-3 minutes. Chicken keema cooks fast so no need to cook for longer time.
- Before removing check the seasoning, add chopped coriander and transfer to a bowl.
- Stuffing is almost ready. Come to the dough.It is double in size now.
- Punch the dough.
- Dust a work surface with flour and transfer the dough in the work place. Divide into 3 portions.
- Take one portion and roll it with a rolling pin to form a big thin circle.
- With the help of a cookies cutter, cut the circle into small disks.
- Take the stuffing, add 1/4 cup of mozzarella. Mix well.
- Take 1 teaspoon of prepared stuffing and scoop in the centre of each disks.
- Now give the shape of your choice. I just pinch 4 sides of the disk to give a square shape. Some of them are triangle size. You can give dumpling shape also.
- Like this form all the pastries. You can make approximately 30 small fatayer.
- Pre heat oven at 200 degree Centigrade for 10 minutes.
- Line a baking tray with aluminum foil or baking sheet.
- Place the prepared fatayer on the tray.
- Brush each fatayer with little milk.
- Bake them for about 15 minutes or till light golden brown.
- Take out from oven and keep aside for 5 minutes to cool.
- Afte 5 minutes transfer to serving dish and serve with some tomato ketchup.
