  6. 1/4 cup yoghurt
  7. as needed Water
  8. 1 tsp crushed coriander leaves
  9. 1 tsp crushed cumin
  10. 1/2 cup any flavourless oil or ghee
  11. For the filling
  12. 3 big boiled potatoes
  13. 1 big onion finely chopped
  14. 1 tsp crushed coriander seeds
  15. 250 grams paneer
  16. to taste Salt
  17. 1 tbsp chaat masala
  18. 1 tbsp roasted cumin powder
  19. 3-4 finely chopped green chillies(optional)
  20. Handful coriander leaves
  21. as required Butter for final garnishing (optional)

Steps to make to make Amritsari kulcha Or Chuchur Naan

  1. Beat the yoghurt and make it smooth then add baking soda to it and mix well. Take yoghurt in a big bowl because it activates immediately after adding baking soda and keep it aside. Now in a big bowl add flour, salt, crushed cumin and coriander seeds and chopped green chillies and mix very well. Then add oil and again mix well. Now rub the mix between to palms so the oil and flour Incorporates well.
  2. Take a portion of flour mix in your palm if it binds then it means it's perfect. Now add the yoghurt mix and again mix it well then add water little at a time and knead a soft and smooth dough. Knead it for a good 10-12 minutes. It should be so smooth that if you press it tgen it bounce back and didn't stick to your fingers. Now cover it and keep it aside to rest for an hour. In the meantime let's make the filling.
  3. In a big bowl mash the potatoes and then the paneer and add all the ingredients to it except the onions. Mix those all very well. Add the onions only when you have to make the kulchas because onion has a lot of water content and it will ruin the kulchas. Now take the dough make two equal size ball of it then keep one ball aside and start to roll the other ball dusting some flour on the work surface. Roll it as bug as you can then apply oil gently on it so that it could not stick.
  4. Now dust some flour on it and start rolling the disc from one side just like a tight log. Roll it over 3-4 times and then cut it in the desired size. You can see the layers in it which will make the kulcha more crispy. Like so do with the 2nd ball. Now press it with your hands or roll it with the rolling pin. Then take a lemon size ball of filling and put it in the centre of the rolled portion. Then tuck it from all the sides so that the filling couldn't conw out while rolling the disc.
  5. Roll it to the size you want just like we roll the chapatis. Now apply some water on one side and sprinkle some crushed coriander seeds, onion seeds, kasoori methi and chopped coriander leaves on it and roll it twice so that everything could stick well. Now apply some water on the opposite side and place that water side on the hot griddle. Then sprinkle some water and cover the griddle. When done from obe side flip it over and cook the other side.
  6. When both the sides are well cooked and it takes around 3-4 minutes then lower the flame and cook it from the sides for two minutes and then place it directly on the flame cook from both sides for 30 seconds or until het burnt marks then roll it from all the sides and cook it. Now put it in a plate and crush it from all the sides with both of your palms. Now add a dollop of butter on it and serve it hot.
  7. Serve it as it is or with ketchup or tomato sauce or tamarind chutney or with yoghurt or raita or any veg or non-veg dishes or paneer, tofu or chole whatever you like it tastes awesome or serve it with punjabi nutri keema as I did. You can find the recipe on my account.
