  2. 1/2 cup besan/gram flour
  3. 1/4 tsp cumin seeds
  4. 1/4 tsp Coriander seeds
  5. 1/4 tsp red chilli powder
  6. 1/4 tsp turmeric powder
  7. to taste Salt
  8. 2 tsp Finely chopped Coriander leaves
  9. Pinch baking soda
  10. For gravy
  11. 3 tbsp Oil
  12. 1 bay leaf
  13. 4 cloves
  14. 2 dried red chilies
  15. Pinch asafoetida
  16. 1 tsp cumin seeds
  17. 1 tsp mustard seeds
  18. 1/2 cup onion chopped
  19. 1 tsp green chilli chopped
  20. 3/4 cup tomatoes choppe
  21. 1 tsp ginger garlic paste
  22. 1/4 tsp turmeric powder
  23. 1 tsp red chilli powder
  24. 1 tsp Coriander powder
  25. 1/2 cup yoghurt whisked
  26. 1 tsp kasuri methi
  27. 1/4 tsp garam masala
  28. to taste Salt
  29. as needed Water

Instructions to make to make Besan Pakoda Sabji

  1. Heat 3 tbsp oil in a pan over medium heat.
    Add bay leaf, dried red chilies, cloves, cumin seeds, and mustard seeds to it. When they begin to crackle, add the chopped onions and sauté on medium heat for 4 minutes or saute until they are light brown in colour.
    Add the green chilies, tomatoes, ginger-garlic paste and sauté for 5 minutes or until tomatoes are mushy.
  2. Add red chilli powder, coriander powder, and turmeric powder to it.
    Stir well and cook spices for 2 minutes.
    Add 1/2 cup water and mix well. Let it cook for 2 minutes.
    Now lower the heat and slowly add the whisked curd and kasuri methi.
    Mix well and stir continuously till it comes to a boil.
    Let it boil on medium-low heat for 5-7 minutes.
  3. Add water in a large bowl.
    Soak your favorite pakoras in hot water for 5-7 mins.
    Add 1/2 cup water to the sauce.
    Drain pakoras with a slotted spoon and add soaked pakoras and stir well and boil for 3 minutes.
    Once you see the oil coming up to the surface add the garam masala powder, salt and mix well. Cook for 2 more minutes.
    Stir occasionally.
    Transfer the curry to a serving dish and garnish with chopped coriander leaves.
    Serve hot with rice or roti.
